Summer Treats

Enjoy these quick summer treats all season long!

Ice Cream Cookie Sandwiches-
All you need is a batch of you favorite cookies, homemade or store bought, ice cream and toppings such as chocolate chips, sprinkles, toasted nuts or coconut. Place a scoop of the ice cream in between two cookies, then roll the sides in topping. Double wrap in plastic wrap and freeze.

Frozen Fruit-
This works well with peeled bananas, grapes, strawberries and blueberries. Prepare fruit, place in freezer bags, freeze and enjoy! This is a great and healthy way to cool off on a hot, steamy day!

Pudding Pops-
Prepare instant pudding and divide into an ice cube tray. Freeze until pudding is thickened, about twenty minutes. Place a wooden stick into each pudding cube. Return to freezer until pops are frozen. Pops can be individually wrapped for longer storage. Chocolate chips, marshmallows or chopped candy bars can also be added to the pops.

Banana/Yogurt Smoothie-
1 banana, 1 cup or small container of vanilla yogurt, 1/2 cup milk, several ice cubes and honey to taste. Place all ingredients in blender until smooth. Substitutes can include strawberries, other yogurt flavors, and alternate sweeteners.

Fruity Gelatin Surprises-
Prepare gelatin as directed. Cool slightly. Place 3-4 seedless grapes in each of six small plastic cups. Pour gelatin over grapes dividing evenly. Chill until gelatin is firm.
